Finca Campo Hermoso is an extraordinary feat of production and attention to all the small details therein. This effervescent and fruit-forward coffee is comprised of cherries selected at their optimum point of ripeness. The coffee then undergoes a 96 hour carbonic maceration process with hops and starter cultures. After this initial phase the coffee is pulped and it undergoes a second 72 hour fermentation, integrating the hops and IPA mossto (crushed coffee fruit juice with pulp and cherry skins, containing lactic bacteria and yeasts that enhance the fermentation process) from the first fermentation. The result is a coffee that sings with pink lemon and sparkling hops.
